Food culture extends beyond our plates. Here are some media favorites that expand my cultural horizons and deepen my appreciation for the stories behind what we eat.
Podcast. Gastropod looks at food through the lens of science and history. this one is one of my favourites! so many good episodes... you'll have a great time exploring the history of avocados, vitamins, cherry tomatoes and so much more
Call it an encyclopedia with recipes or simply the bible of fermentation. This is a fantastically comprehensive book with information on (almost) all fermented foods you can think of.
Podcast. Always interesting with long and short recap episodes. Hosted by ZOE CEO Jonathan Wolf, the world's top scientists explain the latest health, nutrition, and gut health research in an accessible way to help you improve your weight and health.
Cookbook. One of the best guides for fermentation out there with an extensive theory section and practical tips and tricks. René Redzepi, chef and co-owner of Noma, and David Zilber, the chef who runs the restaurant’s acclaimed fermentation lab, share never-before-revealed techniques to creating Noma’s extensive pantry of ferments. And they do so with a book conceived specifically to share their knowledge and techniques with home cooks. Fermentation is already building as the most significant new direction in food (and health). With The Noma Guide to Fermentation, it’s about to be taken to a whole new level.
Cookbook. Baking with whole grains requires special techniques. in this book Peter Reinhart offers groundbreaking methods for baking whole grain breads that taste better than any you've ever had. I love a good theory section and this book has an excellent one!
Book. History and current analysis of the food industry. Michael Pollan follows each of the food chains that sustain us—industrial food, organic or alternative food, and food we forage ourselves—from the source to a final meal, and in the process develops a definitive account of the American way of eating.
Podcast. Wellness and weight loss, debunked and decoded in a very fun way! all Aussies should listen to the two episodes on Pete Evans. Another favourite episode is the one about Bragg apple cider vinegar
Book. In "In Defense of Food", Pollan proposes a new (and very old) answer to the question of what we should eat that comes down to seven simple but liberating words: "Eat food. Not too much. Mostly plants." Simple manifesto that we should all live by.
Podcast. Short episodes and research-backed information with references! Thinking Nutrition is all about presenting the latest nutrition research in plain language and then translating this into what it means for your health. Dr Tim Crowe is a career nutrition research scientist and an Advanced Accredited Practising Dietitian.
